No I wouldn’t recommend changing a personal essay to say you instead of I. I don’t think it would sound right. It’s not a matter of substance, it’s a matter of purpose. Meaning no matter how you change the words in a personal essay, it’s purpose will still be a personal essay, which will not garner (as much) attention as something written specifically to educate or entertain someone else.
